性状：阿力糖是一种白色无潮解性结晶性粉末；无气味或略带异臭。有强甜味，风味与蔗糖接近，无后苦味和金属味，甜度为蔗糖的2000-2900倍（为10%蔗糖溶液的2000倍，为20%蔗糖溶液的2900倍）。不吸湿，稳定性高，易溶于水。
阿力甜是一种二肽类甜味剂，甜度为蔗糖的2000倍以上，在酸、热等条件下均十分稳定，室温下PH值为5-8的水溶液，贮存半衰期为5年，5%水溶液PH值为5.6，无后苦味和金属碱、涩味，且口感与蔗糖接近，甜味迅速、持久、安全。用阿力甜的部分饮料，经长时间储存之后会出现一些不配伍的现象，感官分析发现有明显的硫味。
现在主要用于食品和糖果，浓度范围20～200ppm。
作为强甜味剂，一般被认为是无毒和无刺激性的物质，WHO规定阿力糖日允许摄入量可达0.1mg/kg
目前，阿力甜尚未被FDA认可，全世界只有中国、澳大利亚和墨西哥等6个国家批准使用，我国卫生部于1994年就已批准使用。1996年JECFA确定的ADI值为1mg/kg.

使用注意事项
（1）本品热量低，甜度高，其甜度比糖精高7倍，比阿斯巴甜高12倍，甜味似糖，无苦味金属味。
（2）因本品甜度高，直接使用时不易控制，可先稀释。制作固体干粉时，用麦芽糊精、木糖醇或其他安全的适宜稀释剂混合。制作液体，可部分或全部用钾、钠、镁或钙的氢氧化物中和，并加入适量的防腐剂，以防止微生物生长。

Characteristics: a white sugar is a non deliquescent crystalline powder; odourless or slight odor. Have a strong sweet flavor, close and sucrose, no bitter and metallic taste, sweetness is 2000-2900 times that of sucrose (2000 times, 10% sucrose solution for 2900 times in 20% sucrose solution). No moisture absorption, high stability, easy to dissolve in water.
Alitame is a two peptide sweeteners, the sweetness is 2000 times higher than sucrose, acid, heat and other conditions are very stable at room temperature, pH value of solution 5-8, storage has a half-life of 5 years, 5% aqueous solution of pH 5.6, no bitter and astringent taste, alkali metals, and close to sucrose rapid, durable, safe, sweet. Using alitame part of the beverage, after long time storage will be some incompatibility phenomenon, sensory analysis found that the sulfur smell obvious.
It is mainly used for food and candy, the concentration range of 20 ~ 200ppm.
As sweeteners, is generally considered to be non-toxic and non irritating substances, WHO provides a sugar acceptable daily intake of up to 0.1mg/kg
At present, alitame has not been recognized by the FDA, the world only China, Australia and Mexico and other 6 countries approved the use of, China's Ministry of health in 1994 has been approved for use. In 1996 JECFA to determine the ADI value for the 1mg/kg.
Use the matters needing attention
(1) this product is low in calorie, high sweetness, its sweetness is 7 times higher than saccharin, 12 times higher than that of aspartame, sweet like sugar, no bitter taste of metal.
(2) for the product of high sweetness, not easy to control when used as directed, the first dilution. Preparation of solid powder, with the appropriate diluent maltodextrin, xylitol or other security. Production of liquid, in whole or in part with potassium, sodium, magnesium or calcium hydroxide neutralization, and adding proper amount of preservatives, to prevent microbial growth.
